Making of Traditional PATTHAR KA GOSHT at Novotel Hyderabad Convention Centre | MUTTON KEBAB RECIPE

Aiyo! My mouth is watering… … even as I am holding this Patthar Ka
Gosht in my hand! Mmmh. We are here at The Novotel Hyderabad
Convention Centre. And I am here with Chef Iqbal. Chef Iqbal is gonna be cooking up… … two very interesting… Patthar Ka Gosht. So we will look at the making of The Patthar Ka Gosht… …right from the ingredients… …to the time that the Gosht… …is cooked on the Patthar…. …to become then, the Patthar Ka Gosht. Mutton slice! Ginger garlic paste. So, some mustard oil is going into it. You can see that all the spices… …that we have here have gone into that meat… …and that’s now being… …massaged, mixed into the meat. Chef is trying to make sure that he gets the flavours… …of all the spices, into the meat. Thats what he is trying to do here. So because you flatten it, you also have more surface area of the meat… …so you have more surface area for the
spices to hold on… …to the meat… ….and that results in that flavourful… …Patthar Ka Gosht. Ah. So the masalas have gone into the meat… …and he’s now going to keep it for about 45 minutes. Its going to be marinated for 45 minutes… …allowing for all those spices… …for all the powders, for the oils, for everything… … to get inside that meat completely… …and render it flavourful, before it goes on the Patthar… ….for this Gosht to become the Patthar Ka Gosht. I love the sound of that sizzle… … that this meat is making… …as it kisses this hot patthar, the granite. So that masala is getting cooked… …and you can now smell some of that aroma. And as we turned the meat… …as we…turned it around… …you can now see that the masala… … that the meat is getting cooked slowly… …and you can also smell some of that aroma in the air. So there’s some ghee that is now going
on the Patthar Ka Gosht. Aah! So that meat is being turned Oh I can smell that… … I can smell that aroma of that ghee and some of those spices rise up… …and also of that meat… …that smokey aroma of the meat. I am getting impatient to taste this meat. You know there’s something about
watching meat cook on fire. And in this case the meat is cooking on a stone… … that’s being heated with fire with these charcoal. There is something delicious about watching meat… …getting cooked on a flame. So the colours have to deepen. So he says that when the colours begin to deepen… …and you can see that crust form… …on the meat… …that’s when you know that the meat is
ready to be served. So the oil that is applied in the begining is just to ensure that the meat doesn’t stick to the… … stone in the beginning… …but as the meat is cooked… …the meat starts getting cooked in its own juices. So it’s got the spices, it’s got a bit of tang… …and it’s got all that masala that’s gone in… …to this juicy piece of meat. Arre Wah! You know my mouth is watering… …even as I am holding this Patthar Ka
Gosht in my hand. That aroma, that smokey aroma of that meat… …layered with all the spices. Mmmh. That meat is tender. It’s got all that smokiness that you taste on your palate. The spices have come together… …in the perfect harmony. There’s nothing that you taste a little more, nothing that you taste a little less. You can see that the spiced have penetrated this meat. Mmmh. So if you are in Hyderabad… …make sure that you taste the Patthar Ka Gosht. And if possible… …come to the Novotel Hyderabad Convention Centre.
